Our Coconut Black Vinegar is made from Organic coconut sap and Juruh Hitam (juruh hitam is the result of processing coconut sap to a certain level of sugar content), without pasteurization.
In its production process coconut black vinegar is divided into 3 stages. Browning Process, Blending, Filtration & Fermentation. Coconut Black vinegar takes between 12 months to 4 years for balsamic style coconut black vinegar products. Our Coconut Vinegar does not have a mother.
Our Coconut Vinegar Production Process only uses Vinegar Starters from the previous batch and 100% raw. In principle the coconut vinegar process consists of Fermentation of Coconut sap into Ethanol, and the oxidation of ethanol into Coconut Vinegar.
